I am having a party on Sat for a soccer match and th ought that I would do something octoberfest like. I tried to find some pork shanks, none available locally, and they are too costly to buy online, and I might not get them on time anyway.
I had the thought of getting a pork bone on roast like they cut pork chops from, removing every other rib so I can cut them thick, I was going to score the top and bottom to get more smoke flavor. I figured each bone would feed 2 people. Is this even realistic.
Another idea I had was to cut a pork shoulder into 1 lb pieces, and smoke them. I could get some good smoked pork but worry about too much fat.
Any other ideas would be helpful, I don't want to have to resort to bratworst, or some sausage thing.
