Stallings NC
First time smoker in Stallings NC.  I have read been reading this forum for a few weeks now as I purchased my first smoker (Master Forge Propane - modified with gasket).  Did a chicken a couple weeks back to cut my teeth.  Turned out very tender and moist but over the top on smoke.  After reading the collective posts I decided to make a go at small Brisket and Butt cook while working from home today.  Have cut back substantially on the wood feed, (mostly hickory with a touch of apple and mesquite) and like what I am seeing so far.  Subtle blue smoke!  Got my fingers crossed.

Welcome, neighbor. I'm up in Concord, but drive through your area everyday, taking my wife to work in Indian Trail and heading on over to southwest Charlotte from there.

Don't feel like the Lone Ranger on the smoke. My first attempt at smoking was with my brother. We loaded up the smoker with a crap load of meat, then proceeded to burn through a crap load of hickory. A few bites in we both looked at each other and said, "this tastes like s#!t!"

 Practice makes perfect, though, and since then most results have been a much more pleasant experience (and cheaper on the wood supply).
