I'm doing a meatloaf Saturday during the Big Game. Will also smoke a couple taters for mashing and make some slaw. Yours looks great edmonds.

Very nice Steve...

Very nice and I'll bet the rub was great! I really love smoked Meatloaf's and fatties.

Heck Yeah!

Yep, gotta do one soon 👍

mmmeatloaf🤤

I gotta do this - and wrap in bacon too!!

I still say meatloaf is one of, if not, the best thing I have made in a smoker.

Thanks everybody.
Yes, meatloaf is ideal for smoking. It's not very dense, and smoke easily penetrates and permeates the meat with goodness. I don't use bacon because it's so good on its own.

Here is what I usually put in mine:
1 egg (lightly beaten); 1 - 1.5 lb ground beef (80-85 % lean); sautéed vegetables (onion, sweet peppers, jalapeño, garlic); 2/3 C bread crumbs (unseasoned); 2 T Worcestershire; 1 T mustard (Dijon or brown); 1 t paprika; 3/4 t kosher salt; 1/4 t pepper. Amounts are approximate.

Here is my rub:
2 guajillo chiles
1 smoked serrano or chipotle chile (not adobo)
grind chiles into powder (or use commercial powders)
1 t brown sugar; 1 t smoked paprika; 3/4 t kosher salt; 1/2 t garlic powder; 1/4 t pepper.

For sauce you can use ketchup and water as base, then doctor up with worcestershire, hot sauce, paprika, and maybe a bit of the rub.
