I am building a large event trailer for a client.
He seen one of the other trailers I built and got a case of big dick syndrome.
So I didn't F* around when he said he wanted something big to wow the crowds. I went straight for a 2000 liter (500 gallons) reverse flow and am adding a 500 liter vertical above the firebox.
As steel is stupid expensive here I decided to use a 250gallon (1000 liter as the firebox. You can't see it but 2/3 of the way down the inside of the tank is a blank off plate to seperate the firebox for the smoker and the Brasero for the parrilla.
So we went big on the parrilla 240x70cm should do it. it will be mounted over the brasero ( hot coal maker) adjacent to the smoker. I hade a gap in between them, so decided to use one of the small 500mm tube I use for the small smokers and use the heat from the brasero and firebox for an oven.
The end cap I cut off the 500 gallon tank I am re using on the front of the trailer for and al asador with 3 crosses. Also reusing the end cap off the 120 gallon to make a gas fired paella disc that will hinge from under the stainless table. He also wants a freezer and I am going to try and make space for a whole pig cooker.
Let me know if y'all think of a good name for the trailer.

Notching it out for the vertical smoker
Yep my 500 gallons have 3 racks!

On the vertical the door is quite large to allow the racks to pivot out for easy access. The small door on the left is to load wood into the Brasero to burn and make coals for the parrilla.
The oven will have 2 horizontal racks and the stack from the brasero (hot SOB) will go up the back of the oven.
I will make the bumper removable so nothing gets burnt.
Still haven't figured out a height for the stack yet. The owner is coming tomorrow, so see what he wants.
it is 2 inches higher than ride height at the moment.
