We on the SMF love to help the new Smoker's. One of the best ways to learn is trial and error . We can help you through these, and with the habit of recording your cooks on a log will help shorten the learning curve.

I'm a big believer in this and encourage it's use... this way next time you fire - up the smoker , you'll have some scenarios you can avoid. My suggestion is to start with inexpensive meats(Chicken is great) , cook it as per suggested here and write the outcome down. You will find you are becoming more and more at ease with your equipment and skills.

There are owners of every type of smoker you can name, info. is willing given and Kudos as you get better...

Great advice, Stan!  Esp. keeping a smoking log.  Doesn't have to be fancy - what's left of a spiral notebook earlier discarded, just something to write down what you did, then note what you did right and what you want to improve.
 
Thanks Stan! Good advice! I thought I could remember everything but I found out I was wrong! Keeping a log has really helped me!

Another thing I learned was to make small adjustments, if you feel you are close to what you want just make small adjustments and record them. Making big changes will just lead you farther away from what you are looking for.

This is a great thread Stan! Maybe we can get some great advice for newby's and make it a sticky.
