I’m about to purchase this Koch smoker from FB marketplace. It’s going to be a steal at the price. I haven’t gone out to see it yet but the owner who seems very trustworthy is telling me that it is VERY inefficient. it runs on propane.He says that he can only put about 30 pounds of sausage in it at a time and if you put more it takes hours and hours for it to finish. I’m not sure of his process or what he’s talking about but it seems ridiculous that you can only put in 30 pounds in at a time. Does anybody have any experience with anything like this Smoker? He says that everything works correctly. Thanks in advance for any help. I will attach pictures.

Contact Koch. See if you can get a copy of the specs for that model smoker.

See if the specs list the BTU rating for the burner. The BTU rating will tell a lot about the smokers meat capacity.

These vertical cabinets with a direct heat source can work fine with some mild modifications but most definitely you must rotate the trays from top to bottom during the smoke. As Keith already stated it will be best to hang off sticks or small angle iron.

My smokehouse house is 3x3x7’ so the bottom 3’ is for the propane heat and the meat hangs in the top 4’ of vertical space. On sticks or dowels I can pretty easy fit 100# in there. Again though I have a good space of separation between heat source and meat with heat deflectors along the way.

i have same one looking for information and parts but cant find any?
