New guy here. Been smoking for a while but am just now really getting into it as a preferred method of warming up my meat. For the time being I am using a cheap bbq pro offset smoker from Kmart. Found it marked down for a good price. Not great but does the job. I inverted my exhaust stack which puts it closer to the grate, flipped the charcoal rack in the meat box and drilled 3/4" holes every 4" in the top. I am able to maintain about a 5 degree drop from one side to the next with this set up. It leaks really bad so I will. E making some seals for it. I am undecided on whether or not I want to replace it with the old country over under. I saw it at academy and have fallen in love with it. That will be a purchase for next year though. Plenty of time to research.
