Welcome from Middle TN! Crank the heat for an initial burn in to remove any assembly oils, then smoke something fatty to start the seasoning process.

I just actually got done preseason my smoker. Had it set at 275 for 3 hours and last 45 I put some hickory chips in and let it smoke up a storm.

Textbook Masterbuilt break in.
I was so happy with mine, I broke it in a bunch of times.
Now it has this beautiful even smoked patina coating the entire inside.
I would have it running tonight, but rain is forecast.
Can't beat Mother Nature. LOL! ;)
