    Hello all, I'm from Eastern p.a and never smoked before looking forward to it. I just bought a master built electric smoker. I tried Ribs out this past weekend came out pretty good. I think maybe it could of been a little smokier. I have 2 questions. 1 do you keep changing the wood chips throughout the cooking for more smoke? And do you recommend putting tin foil on the grates so it is less messy? Thank you all. I

    Welcome from SC. I hope you enjoy this site. There are lots of folks here with tons of knowledge who are always eager to share ideas, tips, recipes or anything else that you may need. All you have to do is ask. I can't give you any info on the wood chips. I cook with wood all the time and just add flavor wood for the start. I have heard that there is a temp where meat will not accept any more smoke. I don't know. As far as tin foil on the grate, I have never done that. I would think that it would screw with your heat and smoke. It's not that hard to clean the grates, anyway. Good luck and keep on smoking, Joe
  4. Welcome aboard Smokee from a fellow Pennsyltuckian!! Enjoy the forum! Joe Black is correct in saying not to foil your grates... you want heat and smoke to flow around your meat. Make sure you foil the water pan for easier cleanup, especially if you're doing something that's extremely fatty because it acts as a shield over your chip tray and heating element so you don't get flare ups. Otherwise, just foil the drip pan and leave a hole for excess fat/grease to escape into the cleanout pan and take the other grates out (if you're only going to be using one or two) before you start so you don't have to clean them later.

    Great thank you guys for the information. I did use foil my 1st attempt at it. This week I will not. I wasn't sure how it would come out. I was thinking if it got really tender and fall off the bone I'd have trouble getting it off the great. Like I said I am new and never attempted this before.
