Hi to you all.

                  Please let me introduce myself, my name is Dave, AKA:- butchthedog. I live in the UK in Weardale,County Durham and am totally new to 'smoking'.

I have been given a BRINKMAN charcoal water smoker by a friend and well, tried it for the first time yesterday ''smoked chicken'' .. had to finnish it off in an electric oven as I couldn't get the temperature high enough (tried for three hours). 

 As you can see, I have a bit to learn yet and believe that modifications are needed to the 'dustbin' to make it useable and a success.

So I guess i will have a good time here sifting my way through the forums and hopefully be able to contribute in my own way in the future.
