Newbie to the electric smoker

Hi all,

I just purchased a 30" inch Masterbuilt electric smoker and will be using it for the first time this weekend for a large family party. My only experience smoking is with a barrel smoker which has always produced tender delicious meats (brisket and poor shoulder). But sadly my barrel smoker had to be retired and I decided to go with the electric smoker after a friend recommended it. My question is...how do I know how big of a meat I should buy so that it fits properly? I want to smoke a brisket but I don't want to get one that's too big and then be stuck with cutting it in half (the horror). For anyone that has a 30 inch electric smoker...how many pounds is good to purchase that will fit nicely? Any advice would be greatly appreciated!! Thanks!
 
Fit the meat to the size of the racks.
