I just joined up. I am an amateur BBQer and love to cook and grill. I moved across the ocean from my homeland (US) so I hope to keep our american traditions of BBQing and smoking meat going here with my multi-cultural friends.
My first project I plan to attempt this summer is a Drum smoker, with the goal to make smoked beef jerky (and eventually other things, but priority on the beef jerky). You cant get any kind of good quality beef jerky here. My dad recently sent me some beef jerky he made from pieces of steak in a smoker he bought, he said he used hickory chips. I hope to reproduce this with a drum smoker. I will definitely be asking for tips and help here and there, so thats why I wanted to say hi first! I have already started looking at Drums. Is there anything particular I should watch out for? For example, what the drum was used for. I'm not sure if I can get a blow torch as I have seen in some of the guides to burn the drum. Is this a crucial step? Or can I possibly find the right drum (clean/previous use is OK) to avoid this step? I would have to rent this tool or find someone who has it.
