Hello from the lower slower state of Delaware...

I just picked up a used (only used 6 times) Masterbuilt electic smoker 30".  I have never smoked before, and am excited to give it a try.  I have a 5 lb pork shoulder thawing, and I'm going to try my hand on Saturday.  I've been reading thru these forums like crazy for the last few days trying to prepare.  I'm going to rub and wrap Thursday night and throw the pork on early Saturday morning.  Does anybody see an issue with me putting the pork in an aluminum pan to catch the juice rather than directly on the rack?  I will be taking pictures of this experience and posting later in the weekend.  Happy Smoking!

to SMF!  We are so glad you joined us!   Pans are fine....I use the pans to make it easier to get the meats out of my smoker once I have "foiled" them. Make sure you show us pictures of your smokes!

If you need any help roaming around the forums....just holler!  Happy to help out!
