Hi I'm a kinda newbie from the Washington peninsula just getting in to the craft of smoking I own a UDS and just picked up a Cajun Grill with offset smoker box. I've done pork and beef ribs that worked out good and a couple of briskest that we're good and terrible (still learning). I hope to gain some good info from this site.
