Rt410 and I'm already wishing I had gotten a bigger one. I ran it Sunday night for the first time after the first initial burn and quickly realised I could have used the extra real estate but other than that I'm pretty happy with it and I'm looking forward to trying a some type of pork this weekend!
With all due respect sir, I have not seen any where in this site (correct me if I'm wrong) when someone has said "I should have gotten the smaller one". I had a smaller one for a while. You will find a way to make the most of it. I still don't see any pictures 🤣

Thank you!! I was just trying to find if i could turn it up after it hit 165.
On the pellet rig, I run it at the lowest setting for an hour or two, if time permits, to maximize smoke. Then I crank it up to 275 or even 300° for the rest of the time. There is really no difference in the end product done low and slow vs hot and fast.
