I'm curious about a big boy smoker like a 250-500-1000 gallon smoker and how they work. I currently use an old country pecos smoker and I know the ease of fluctuations in temp from one end to the other and the 8-10" splits I have to use and what not so I was curious to know what people do in the big boy smokers. And how well they hold temp from one end to the other. Ultimately I'm in the ballpark for purchasing a 250 or 500. Still on the fence. It's a huge upgrade but I feel like they aren't as high maintenance as the littler ones. Am I completely wrong? Just want to know if any of you have or know anyone with a big smoker with a big box. Do you just lay like 4-6 big splits in there and let it rip? How long does it take to heat up and get to an all around temp? (On my OC it takes about an hour to get up to a good temp) I also notices some of those bigger smoker don't have a heat deflector thing from the firebox into the chamber. Is this normal? Just want to ask a few questions before purchasing and completely not know what I'm doing.

I have no idea, but you could try to get with a local BBQ fundraiser place near you and see if you can get a job there. Or hell, just go up and ask someone running one, they'll tell you everything about it I'm sure.
