Hello. I'm new to smoking and found this site while searching for info on ECBs. I've only made one rack of baby backs in my new smoker, but the family and I are enjoying it so far. I used far too much rub and smoked the ever-lovin' crap out of them, so they tasted kind of like a salty campfire...but the texture was perfect.

I'm planning on doing three more racks for dinner on Xmas eve, so I have to work out the bugs by then. Shouldn't be too hard, though.​
 
Welcome to the board! Yes it can take a few tries to hit it right, but learning is part of the fun. Ask for advice and you'll find it here.
