Well I tried a new pork recipe for New Year’s dinner.  The tradition in my family is to have pork, cabbage, and black eyed peas for New Year’s dinner.  I wanted to something different with a pork tenderloin so I found a recipe at Dizzy Pig BBQ and the results were great.

I modified it a little and when I do it again I probably will make another change.  I used a single larger tenderloin at 3.8lbs.  Next time I will probably swap out the mozzarella for feta cheese, I’m just a fan of feta.  But I was happy with the results.  I did direct grill it at but  I threw in a couple of chunks of hickory just to see if I could get some smoke on the pork and it did great for such a short time.  The whole cook didn't take and hour.
