New Year’s Eve pork butt and smoked Mac

Happy new years All. For our New Years dinner we smoked a 9lb butt, home made Mac and chees with green chili’s. Apple coke slaw which was a big hit. First time time SoFlaquers finishing sauce and wow. That’s next level stuff.

9ld butt rubbed down with Smokin Als rub. So far this is my favorite butt rub. 10 hr cook at an average of 230. Used oak, cherry and apple. Total cook time was 10 hrs with an hr rest. Mac takes about an hr with partial cook in oven and final cook for smoke which takes about 30-45 minutes,

bark turned amazing, and the taste was excellent By far this was the best one I’ve done I have been doing them at 275 and probably gonna stick to the low and slow method from now on

starting to shred, but we stopped for some snacks LoL then shredded with the bear claws

Being from PA we are having the traditional pork & sauerkraut. Not taking any chances of having a bad year.

Thanks for the nice comments. I have not heard of the sauerkraut and port tradition. I may try that with the left overs

Amen to that sonny and it paid off. It was as tender as I have ever made.

Very nice. I had to comment when I noticed you had 2 Smoke probes. I just received my 2nd one and glad to see I'm not the only one with at least 2 of them. Nice write up. Top Notch!
 
Thanks Tex, Im a big fan of multiple probes on big cuts of meat. It was awesome watching the two different probes come together on the same temp towards the end of the cook. What kind do you use
 
The same ones you have, just different colors. LOL. I love them. I also purchased an additional probe which I plan to use 3 of them as meat probes and the other for the smoker temp when needed. My cooks are typically small since its just the wife and I most of the time. The only time I see using both are when the kids/grandkids come over. Ooops, I just gave away my age! That's one of the reason I like the Smoke. Easy to read without glasses!

Nice bark by the way. Money!

Thats a great idea about utilizing a 3rd probe. Now my wheels are turnin..LOL I attribute that bark to SmokinAls pork rub. If you ask him Im sure he will PM you the recipe. I went heavy handed, more than I have ever done and this bark was not only nice in color but we were actually were eating it like candy. His rub is awesome.

Cool. I'll hit him up for the recipe. When I ordered the 2nd Smoke, the site showed more accessories for it and 1 of them was the additional probe. That's when the light bulb went off and for 14 bucks (ish) it will certainly come in handy. And never hurts to have an extra one just in case. And they are at $79 bucks right now, at least they were a couple of days ago. I am amazed how many years I Q'd without probes. It would now be considered the Zombie Apocalypse if I didn't have em! LOL.

I know what you mean, I dont know how I did it for all those years without the probes.
