Hey all,
I got a couple of new toys last week and couldn't wait to put them to work.
So, I pulled a chuckie out of the ol freezer thawed 'im out, rubbed 'im and let 'im sit over night in the icebox.
In the mean time, I fixed the date on the camera after that pic of the rubbed chuckie.

Loaded up the MES with the chuckie, Dutch's beans, and sweet potatoes.
Temp wouldn't stabilize after I put the beans in and the meat temp started dropping.
Then, it stalled at about 151* - I got aggravated, yanked it out of the smoker and put in a pan with some beef stock, covered it in foil, and stuck it in a 275* oven for about 1.5 hours.
Came out pretty good, I just hate putting anything in the oven that should finish in the smoker. I guess I could have done the same thing and turned up the temp on the smoker, but for some reason the temps wander a bit on the MES.
I pulled one end and sliced the other..not bad, but I would like more smoke flavor. Even though I seemed to get plenty of smoke from the AMNS the meat just didn't seem to have enough of the smokey flavor.
I served it up as a slider with my bbq sauce, a little au jus on the bun, and a bread & butter pickle. Sides were Dutch's wicked baked beans and smoked sweet potatoes with sea salt & butter.
