I have just finished making a smoker out of an old standup freezer. I'm using a 1000watt hot plate for my heat source. Having trouble getting heat above 140c. Any tips or suggestions? Thanks

No seriously, I agree with Al. A bigger heat source is needed.

Having trouble uploading pics..

Would out side temp affect the smoker? I am in northern alberta Canada. We still have 4' of snow and the temp is around -8c

So your about 17* w/four feet of snow. Yeah that could do it.
