I have learned that wen using wood [not pellets] take the bark off
it wont taste like an ash tray that way
made Canadian bacon last week and put some into the smoke box over maple
WOW does it taste great
have done several Hams ,bacon slabs , chops ect.
 
Welcome to SMF glad you joined us. You can keep all that snow way to cold for me. You'll find lots of good info here and even better people but be very careful these people will have you smoking way more than pork :emoji_laughing:
