Howdy. Just signed in and am new to the smoking family. My friend moved and gave me his original Oklahoma Joe's 16" side firebox smoker. I' been an Exec. Pastry Chef and cook for the past 25 years but have never done any home smoking. Totally different beast than using a stove top or converted hot box with soaked wood chips.

I've just done a tri tip and it came out great! Held temp at 250. Don't know if I just got lucky on my first attempt but I am hooked. Even just bought a chest freezer so I can stock up on meats when I see a good deal.

Love the sight so far and look forward to learning a lot from y'all.
 
Welcome to the board! Settle in and look around. Use the Search to look up your smoker and see how people use them.
