Hi all,
I am new to the forum but not smoking. I recently went to a Masterbuilt and so far nothing but good results. I need to add the cold smoking kit. I have a pork butt in as I type.
I do have a question. My local Sams Club has corned beef from brisket on sale for 3.20 lb. Has anyone had experience hot smoking corned beef for pastrami?
I am new to sausage making. I recently picked up Michael Ruhlman's book and having much fun with that. Making hot dogs tomorrow. My first go around with bacon came out salty but a rinse takes care of that. Next time I'll leave the cured belly in a water soak for a couple hours before smoking,
