I'm new to the forum; but I've been smoking meat for a few years. I mainly do pork and birds. I grew up in NC and have eaten Lexington style BBQ for as long as I can remember.
I'm currently using an MES 40. I thought an electric smoker was blasphemy; but, after picking one up (and since I'm not doing a lot of smoking for larger groups anymore) and using it about 5 days a week for the family and I, I'm in love with it.
I wouldn't consider myself a rookie; but, I'm certainly no master, either. The stuff I make is edible and hasn't killed anyone, yet.
I look forward to learning from this site. I've got a butt in the MES 40 right now that's been in since 7:00 this morning and I'm going to add some ABT's when I get home. Doing a double smoked ham tomorrow, 3-2-1 ribs on Thursday, and then letting it rest for a day or two while we grill some Ribeyes on Friday night. Going to be a great week!
I'm most interested in wild game, though. I'm all ears if anyone can direct me to wild game recipes for the smoker. I dabble quite a bit, but I'm always interested in learning more. I'm going duck hunting in Arkansas for 4 days next week and plan to smoke a few ducks after that a few different ways.
Now that I've done the roll call, I'm going to retire back to the smoker and keep reading threads on here.
