Hello everyone....

I have been enjoying following the forum, but finally decided to join. 

A little about me:

I'm located in SE Wisconsin and have been smoking for about 3 years now.  I'm using an older New Braunfels offset smoker that I picked up at a rummage sale in Northern WI.  Getting that thing back home in the back of a pickup truck was an entertaining ride.

Having lived in Texas for a few years, I picked up the taste for all things BBQ.  My first smoking attempt was a full brisket for my fiance's birthday party a few years ago.  About 20 people (including her family that was up from Texas on vacation) all waiting around for some serious beef. No pressure there.

After getting advice from my butcher, a couple of experienced smokers, I am happy to say that it turned out very well.  Even impressed the Texans (or maybe they were just being nice)
