Hello, my name is Bill from just south of Seattle, Wa.  I have been grilling on a gas grill for a few years but have wanted to some "smoking".  I wanted to build my own offset but over the weekend was able to pick up a New Braunfels.  Now I will be doing some mods to it.  I was hoping that there are other folks that have done some mods to help me out.

I have "smoked" on the gas grill but I have been told its not like using a smoker.  I hope to find out soon.
