Hi, my name is Marlies and I live in Connecticut.  I purchased a Masterbuilt Electric 30" inch smoker and have used it a few times.  I'm new to the smoking world and have had a few successes on an old Char broil off set smoker.  I have made a pork loin and chicken breasts which came out well.  I tried a brisket for the first time this weekend and had problems.  I never achieved a "bark" not sure if it is because I should have added water/juice to the pan for a more moist smoke.  I did marinate overnight and then added a rub before smoking.  Could use any tips as to what I did wrong.  I do see that this smoker seems to run about 20 degrees hotter than it states so I'm still in the adjustment curve of my smoking path.
