Hello....Tony here from central North Carolina, as some would say, the BBQ capital of the world. Don't know about that, I am from the "Deep South" originally and we had some might fine bbq down there. I have been cooking most of my adult life. I am anxious to learn more about smoking and cooking in general. Love a good Pork Butt (avatar) but any kind of smoked, grilled or fried food is great. I love to cold smoke different cheeses as well, it's hard to beat a good slice of Smoked Sriracha Cheese!!! Look forward to learning from everyone here.

I too am from the Deep South and totally agree, we do have some mighty fine BBQ down here. I lived in NC for 9 years, and never found it to be quite as good as here in my local area where I was born and raised and where I live now. It is probably because it's what I grew up on (kind of like mama's cooking). Here, when you go to one of the nearby BBQ joints and order a BBQ plate, it is assumed you mean BBQ pork, Brunswick stew, and potato salad. If you want anything different, you have to tell them. It is one of my top 5 meals, and I have dined all over the world.
