Hello!  I'm Susan and I'm not to smoking and forum posting.  I bought my Father a Char-Broil Smoker from Walmart for father's day.  My cousins have one, and my best friend in Illinois has one, and Arizona has one... so I thought why not?  We seem to by BBQ or smoked Turkey a LOT, so I thought it might help us save money, and I like to cook, and try new things.  I'm in Topeka, Kansas, so Illinois and Arizona is a bit too far of a drive for some smoked goodies.

We did buy a bunch of things to try smoking last night, and decided on a Salmon.  I was a complete newb and cut the salmon in strips, washed it off, dropped it on some foil, and set to smoking.  I prolly didn't need the foil, just trying to prevent anything from falling thru the cracks.  About an hour later, with some adjustments to the position of the fish in the smoker, we had it up to temp and took it off.  OMG YUM!!!  I don't think I've ever cooked anything that tasted so well.

I did find I was wishing I had a baked/smoked potato to go along with my salmon, so I'm gonna have to try some potatoes today.  I was also reading on the forums about doing garlic and onions... making a french onion soup with smoked onions.. now that sounds amazing, I just might have to try that.

Any newb advice is greatly appreciated.  I am up for trying just about anything, and can tell I need to do a little shopping. I use Kosher salt all the time, but my parents don't. Vegetable basket sounds very useful.  Right now I have the smoker, EVOO, some foil, and my imagination.  Looking forward to where it will lead.
