I'm new to this forum and I'm looking specifically for info on Chargriller smoker. I smoke a ton of meat every year for work but on an old brick smoker. I got the chargriller but I can't keep the temp below 325 350.

Sounds like it is sucking air, I would try sealing the door on the fire box, also when I ran 1 like that I started my fire next to the cook chamber to slow down the fire,if you start it on the door end it gets a vortex affect causing it to catch on fire quicker. they sell door gasket material that sticks on so its better to do now as it needs to be really clean to stick.

Mike is right those things leak air big time. seal up the door with some sealant or a gasket and that will help you regulate temps.
