Hello all! Joined to gain knowledge from the experts on smoking meats. I'm an American working and living in Germany right now. Tested out my new smoker with some ribs and beef brisket. Had some trouble managing the heat at 275, but after 4 hours the ribs were done and 6 hours for the brisket. All and all the ribs and brisket were very good but could have been more tender.
