Hey everyone I am new to smoking and so far it seems pretty easy. I use an electric char broil 2 in 1 smoker roaster. So far I have smoked ribs, chicken quarters and it all seems to come out tasty. I hope to learn some stuff on this website and like to post pictures when I get some good food come out the way it should.

Made some pork baby backs today and tried a small rack which turned out nice. To make them nice and tender is it the slower you cook them better?
