From Grand Rapids Michigan and have been smoking for years, started on a WSM and two years ago added a Saffire ceramic grill/smoker. Poker shoulders and ribs are the goto for my smoking and I have been working on my brisket with mixed reviews. I will smoke cheese, chickens, turkey and with St. Patty's day coming up this sunday I will have 3 corned beef briskets in the Saffire.
