Sorry, I have another question. I actually need to hold for 24 hrs. I usually wrap in towels and then in a cooler. Can I hold it that long that way? Or is it better in an oven? I’m worried it might get too dried out in an oven?

24 hours will be too long in a cooler. Do you have a turkey roaster? That’s my preferred method for long holds until I get a cabinet warmer. Also welcome from a fellow SoCal member.

That's too long for a cooler. At this point, if you think it's done enough, stick it in the fridge and re-heat it....

Ignore that nonsense. I live in Northern California. Its not true. Certain high pollution days wood burning is not allowed. I don't smoke those days (20 days a year) Welcome to team Horizon.
