Hello from South East PA. I have tried to smoke with my Weber Genesis E-310 Natural Gas grill with a "smoker box" set on the burners... that has never worked. I love my grill and use it about 3-4 days a week in the spring / summer / fall. But I always felt that my ribs were lacking that good smoke flavor. I have 0 experience with charcoal grilling. When I camp I have a Coleman Road trip grill or a tripod for over a log fire.
Bought my first "smoker" a couple weeks ago and used it for the first time yesterday. It pretty much did not go well. On a friends recommendation I purchased the Brinkmann 8105502W 2 door smoker. While I was waiting for it to arrive I did some reading and performed the fiberglass gasket mod and purchased a wok style charcoal pan. I already had a Redi Check Maverick temperature probe setup. However I found yesterday that my grill temp probe was shot so I used the meat probe for grill temp. I'll be ordering a set with 6' leads today. I also bought a chimney starter for the coals.
I'm very much interested in leaning smoking. My friend who recommended the Brinkmann is coming over this coming weekend if the weather holds up and he's bringing over a brisket and he's going to give me a hands on lesson. I'm thinking of smoking a pork shoulder for some pulled pork for my son's baptism next month. Right now the wife is not so sure about that since my ribs failed yesterday.
