Thanks for the welcomes everybody! I read the e-course and it is great info! Also I've been searching and reading the forums ALOT! There is truely a wealth of information here. I smoked a beer butt chicken Friday night and it turned out awesome. I used a mixture of lump, stubbs charcoal and mequite chunks. I'll be moving on to bigger and more adventurous foods as I get a better grip on keeping the temps under control.
