Hey my name is Chris I live in Panama city beach.I just got a used smoker from my uncle. It's a Brinkman charcoal smoker. Would love gas but hey free works. I have helped my father smoke before so I know the extreme basics. My only down fall is temp and time with different meats. Tomorrow I'm firing up and gonna do a butt. Hope all goes well. If I run into any snags I'll be sure to ask questions. Thanks

Water pan smoker??  With the cooler temps you might want to try playbox sand instead. Will give you higher and more consistent temps. Oh and welcome aboard from another Floridian.
