New to the MES, I just put a Sam's Club special together today along with the Cold Smoking Kit and a Controller for the heating element. Its main use will be summer sausage, snack sticks, bacon, jerky and cheese.
Also ordered some Q-MATZ from Todd.
Has anyone figured out an easy way to get sausage rods or hooks up high to accommodate longer sausages and sticks?
What about adding more racks for jerky?

For hanging sausages I'd just hang the hooks from the top rack and remove the middle two racks. Should give you plenty of room. That's a really nice-looking smoker. I use Todd's Q-MATZ every time I cold smoke cheeses and beef jerky.

The top rack to the bottom rack is 17.5" subtract 3" for the hanging string and I'd have to do 12" sausages. there is 5 inches or more above the top rack I was hoping to be able to hang 17-18 inchers.
I have pre Qmatz Frogmats on some of my other stuff it looks the same only less money.
I can't wait to break this one in.

I thought the 340G was the same height as an MES 40.
I still haven't seen a 340G up close.

I just lay my sausages on the racks, but I do Skinless & can't hang mine.

Inside dimensions are 20 3/8 wide x 12 1/8 deep x ? tall best guess would be 32" or 33" tall
 
I have the gen 1 30 . I remove the water pan and hang the longer sausage on the left . I use oak 1/2 " x 1/2 " cut to fit at the highest rack position . I can get 20" on the left side .

OK---I just went out & checked mine:
My MES 40 Gen #2.5 is 19.5" where yours is 17.5".
However I would think you could get another set of rack slide mounts, and screw them on as close to the ceiling as you can.
Then you could get sausages well over 18" to hang there, Maybe 22".

Thanks, Bear! Besides sausage hanging, I'm going to invent another use for the top rack. I bought a set of duck hooks last year. For making Peking or other roasted Chinese duck--and whether using fresh or thawed from frozen duck--you need to air dry the skin by hanging it from said hooks for a few hours while a fan blows on the duck. I'm going to put my unplugged in MES 30 Gen 1 to use since it's the perfect size for the job. Just as for sausage, I'll remove all the lower racks.

Thanks Bear, I'll call them today. I would like to add 4 more shelves for jerky, I think I could cut them in half and get exactly half way in between for the extra racks and then figure out exactly where I need the top "sausage brackets".
