Newbie here.Recently got a MES 30 inch model. I just had my second smoking experiance, and things seem to be cooking a little quick.. On my first smoke, I set the temp on the smoker at 235, and I cooked a couple of filet mignons, 6 chicken thighs, a a few burgers. The filets were cooked to around 155.. The burgers medium well, and the chicken to 165. I smoked the whole time, and everything was done in about 30 minutes.
So on my second smoke, I set the temp at 220. And I cooked a couple of steaks again, some more chicken thighs, and a pork tenderloin (to 145).This time everything took about 35 minutes to get everything cooked. Now I'm not complaining, the steaks and the chicken were delicious. I took the tenderloin off at 140 and wrapped it in foil for about 30 minutes. It was wonderfully moist and tasty, but I would have preferred it have been a little more smoked.
I guess next time I'll set up the smoker at around 190 to try to lengthen out the smoking process a little.
Does all this sound OK as far as cook times are concerned? It seems like I see people taking longer to cook chicken thighs and tenderloins by 20 or 30 more minutes.......I just think If I can get around another 15 minutes of smoke, that it would have just the right amount of flavor I'm looking for......
