well ive been aroung about a week. im from illinois. be 34 next month. been cooking since i was in my teens. i love seafoods and meats.
slow cooked and grilld foods are my staple. ya im a chunky guy. but ya got to love something. right?
i fish and hunt. im a taxidermist and a union plasterer by trade. been doing that for 15 years.
i have a rep around town of being a good cook. but some are afraid to eat my foods because of the chilihead rep i have as well. i grow a garden every year. and have since i moved out at 18. even when i rented before i bought my home. i grow chilis. lost of chilis. from bells to habenaros. and added exotics this year. a friend in texas that has his own rub and seasoning line sent me seeds. african fatili, scotch bonnet, fatili naga jolokis cross, and i grew jolokias this year for the first time. as well as horseradish for the first year.
i have 2 boys. tilers 9 joesef is 16 months. im married and do 90% of the cooking. my oldest loves my smoked tilapia and beef brisket. and i do a pretty good pork loin often. cooked one this month for several fishing buddies from another foreum at a campground. over charcoals and hardwood from the timber we were at.

heres a couple deer i mounted last year.
i also raise rabbits. newzelad whites and a couple other mixed breeds. for meat. so there be some rabbit on the smoking threads soon.
fried rabbit milk gravy.
there good eats. i smoked my first whole one this year. talk about good. one more pic lol. heres the rabbit.
so enough jabbering from me. i was reffered here by a friend on a catfish fourum. i still haven found him. ill have to ask him his user name. hope to get to know lots of good folks here. hello from il.
what the heck. i love pics. heres a brisket i did this spring. i take pics of alot of food to post in the diner on the catfish fourum too.
i burn wood for heat in my shop and even in the home now due to the redicioulious gas costs. i get apple and fruit wood from time to time. and its all split into small sticks about 1"x 1" square. and save it all for smoking wood.
