Hello everyone,
I am new to this site and new to smoking. I just starting smoking a few months ago and I have much to learn. My first question deals with seafood. I want to make some bacon wrapped scallops this weekend and l looking for some ideas on spices for a rub as well as some direction on temperature and time. Thank you.
 
Jeff has an older article on this where he uses his rub (which I find is amazing on most anything.)
The scallops are so delicate in flavor that I would probably just use some salt and pepper before smoking. I would cook at about 225 till done (about 45 minutes). You want to make sure the bacon is cooked.
 
Welcome to SMF. Oldsmokerdude gave you the link to a good recipe to start with. As for spices its really depends on flavor profiles that you like.
 
Welcome aboard, Yup, just some salt and pepper. Maybe give it brushing of melted butter once in a while.
