New here, Wally's the name. From SW MT. I've got a Big Chief, but have only smoked fish with it. I purchased an 18.5 WSM and have used it a few times. I've definitely over smoked on a couple meals! Just need to control how much wood I use. But I have had a couple things turn out good. I bought a good assortment of wood to practice with also. I purchased a Genesis grill last year that I enjoy cooking with also. Looks like a great forum here and I've been enjoying reading it, especially like the pictures everyone posts too!!!
