I just purchased a smoker and a large salmon side. Very new to the smoking idea, but have some friends that are really good at it. I have cured the smoker as directed, marinated the salmon over night, soaked the chips for 1/2 hour and have it out side trying to do something. I have a masterchief smoker but don't know anything other than how to plug it in and turn the dial on. Hope I haven't wasted the fish.
