Hello. I recently purchased a used Grand Chef/Grand Hall propane smoker. I'm no stranger to grilling and smoking though. I've read up on the +'s and -'s of this unit. The igniter was broken off and replacement requires skills better suited to owners of British cars with Lucas Electrics. It starts just fine manually so I'll leave it for now. Up to this point I have mostly done cold smoking cheeses and salmon but I need to try larger beef and pork cuts. This looks like a great site.

I'm in Elk Grove but spend Summer's at our house on the Oregon Coast. Air quality has gotten much better in EG, it's never an issue in Oregon unless there's a fire.
