Greetings all.  I am David and I live in Mississippi.  I have been enjoying your forums for some time now.  There are some true craftsmen out there.  I have been cooking BBQ for 20 years.  I started helping my brother who cooked in competitions for several years.  Now I cook for our church and school fund raisers.  I like the design and build part of the process as much if not more than the cooking.  I am an engineer by education that grew up on a dairy farm working with my Dad in the shop and at the forge.

The rig we use is similar to a JR Enterprise cooker that we made it in our shop during the early 90's.  It is a propane tank that sits over a full length fire box.  The coal tray pulls out full length, as does the ash tray under it. I love the way it cooks.  Put fifteen 15# shoulders on it, get the air set and temp stable, go to bed and forget about it until the next morning.    Holds 250 degrees all night.

Hey David,

Can I ask how and why your rig will hold a steady temperature all night all? Im looking for a new smoker and this is problem number one for me.

Budster,  We use a cooker similar to a JR Enterprise unit.  It has a slide out fire box that extends under the entire cooking area.  We fill the tray with 160# of charcoal and light it in the end and let it feed itself all night.  We have good air regulation on the firebox and exhaust.  That's the best I can tell you.  It has worked great since the day we made it.  Put the meat on at 1800 hrs, get the temp and air regulated by 2000 hrs, leave it alone until the next morning around 0600 hrs.  May need to open the fire box and stir the coals a bit first thing in the morning, but that's it.
