Hi Everyone,

Eric here.  I work at a small restaurant in San Francisco.  I produce cooked charcuterie items and have been doing so for several years.  I'm looking to start moving towards smoking and dry-curing meat as well and am looking forward to getting some insight from the people here.

Hey there we been smokeing meat since 2008 we have a love for it that's as big as texas lol the wife has wood allergies so we pretty much have to do our own bbq smokeing if we want some any how guess that enough anyone ever smoke a turkey whole bigger than 12 lbs

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.
