Hi everyone,
first, I am sorry if my english is not really good, I am french canadian from Longueuil, Quebec.
I am starting a business as a Smoker this september and I want to learn the more I can. I've already use commercial smoker (Really easy to use...) And am now on my own with a big homemade charcoal barbecue and lots of time to try things. The products I want to sell are: Ham, brisket, chicken jamaican style and some other meat, almost for sandwiches.
Any cue will help. Any tricks and recipe will be very appreciate.
