hey im stephen. grew up in texas and now im sationed out in hawaii now so i figured id give my hand at smoking since no real local bbq joints just sitting on the side of the road. im just using a Brinkmann 810-5301-C nothing fancy and so far did a brisket came out pretty good but a little dry and a pork shoulder for pulled pork and that was pretty much a failure. been pulled into doing a ham and turkey for the holidays here but not really sure where to start other then what i can find online. any advice would be great.

Welcome Stephen! You've found the best place I know for sharing ideas on smoking, grilling, curing, etc. There are lots of friendly and knowledgeable folks here who genuinely enjoy helping one another. Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.
