My name is David. I am new to this site. I live in South Louisiana between Baton Rouge and New Orleans. I am 65 years old. I am not new to smoking, BBQ or cooking. However, I do have a question. This past weekend I purchased a Masterbuilt 30. I have not used it yet except to cure it. My question is does the smoker shut off automatically when the meat probe temperature reaches the set point or does it keep going until the time expires? Normally, I monitor the probe temp on my other smokers and take the meat off when the probe temperature reaches the desired temp. Do I have to do the same with this smoker? Thanks.

The MES models we have so far won't shut themselves off at a particular temp.

That setting is just telling it to stop heating at that point. Then it will fall back about 2 degrees & the heat will start again until it get to the set point again. It will do that until it gets to the time setting or until you shut it down or change the temp setting.

I'm 65 years old too.

Thanks for the info. Can't wait to use it to see how it works. Just ordered the cold smoking attachment yesterday. Will be here Wednesday.
